S'mores Cupcakes

Chocolate Cupcakes with a graham cracker crust and grilled marshmallowy meringue frosting. Oh. my. Gosh. They were super duper delicious! I was so excited to do these S'mores Cupcakes for a while now, but I'm not a kitchen torch to toast the summits. I do not know why I have not bought one before, but I'm really excited that I am one for Christmas. Thanks Mom!

Adorable! The first time I met Jennifer was back in 08 when we were both on The Martha Stewart Show. What?!?

Yes. Always crazy for me. I had to show Martha how my Cupcake Pops about six months after I started the blog (PS Last Saturday was the National Day Cake Pops. YAY!) and Jennifer was on the show for the same s 's'mores cupcakes ... I do not get a chance to try when I was on the show.

so I thought they would be perfect for me to her new book.

And boy, am I glad I did. They are fantastic!

They start with a graham cracker crust cupcake. Awesomeness!

Place a teaspoon of the mixture of the crust in each baking cup.

And press with the bottom of a small glass.

Chopped Chocolate

But not all. They get the chocolate, too.

Yep. Sprinkle chopped chocolate on top of the crust and bake for a few minutes to settle first.

Cool ... then fill with baking chocolate cake. YES!

But we can not stop there. Before cooking, sprinkle more graham cracker mixture and the chopped chocolate on top. I like where this is going ... oh and I'm messy!

Beautifully cupcakes. I actually think they are great like that.

Toasted Meringue Frosting

But they would not be without s'mores fluffy marshmallow frosting.

Swirl the meringue frosting over top of cake with a star tip and Toast with a kitchen torch.

PS I love my kitchen torch. It was the first time I used one, and now I want to wear any toast. I would not have waited so long to get one. So fun !!!

S'mores Cupcakes

Serves 24 cupcakes

Ingredients

Graham Cracker Crust

  • crumbs 1 1/2 cups graham cracker (from about 20 places)
  • 5 tablespoons tablespoons unsalted butter, melted
  • 1/4 cup sugar
  • 9 ounces bittersweet chocolate, chopped

Chocolate Cupcakes

  • 2 cups all purpose
  • 3/4 cup plus 1 teaspoon cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon of baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup canola oil
  • 2 teaspoons vanilla extract
  • 1 3/4 cup plus 2 tablespoons sugar
  • boiling water 2/3 cup

meringue frosting

  • 6 egg whites
  • 1 1/2 cups sugar
  • 1/2 teaspoon cream of tartar
  • 1 1/2 teaspoons vanilla extract

Instructions

Making the first crust:

  1. Preheat oven to 325 degrees F. line two muffin pans with 12 cup cupcake liners.
  2. In a medium bow, combine bread crumbs and sugar. Add melted butter and mix well and not dry crumbs remain.
  3. Place 1 tablespoon of the mixture in each shirt. Press the crumbs flat in the coating using the bottom of a small glass. Sprinkle about 2 teaspoons chocolate over each crust. (Reserve remaining graham cracker crumbs and chopped chocolate cupcakes top before baking.)
  4. Bake crust for 8 minutes. Remove the pans and cool the crust for at least 5 minutes before adding small cake batter.

For the cupcakes:

  1. After crusts are prepared, increase the oven temperature to 350 degrees F.
  2. In a large bowl, sift together flour, cocoa, baking powder, baking soda and salt. Put aside.
  3. Next, mix the eggs, milk, oil and vanilla in the bowl of a stand mixer fitted with a spatula. Add sugar and mix well. Then add the flour mixture. Mix on low and then increase to medium. Beat for 2 minutes until blended and smooth. Remove stand bowl and add boiling water. Stir gently with a wooden spoon until smooth. Batter will be thin. Then let the dough rest for 15 minutes and stir again gently before using. Fill liners crusts prepared dough three quarters. Sprinkle reserved chocolate and graham cracker mixture. Bake for about 16-20 minutes until done. Cool in pan for 5 minutes, then remove to rack to cool completely

Make the meringue frosting :.

  1. Combine egg whites, sugar and cream of tartar in the bowl of a stand on insulation. Place the bowl over a pan of simmering water without letting the bottom of the bowl touch the water in the pan. Hold the handle of the bowl with a kitchen glove whisking the egg white mixture until the sugar is dissolved and whites are warm to the touch ... about 4 minutes. Then transfer to the stand mixer bowl. Using the whisk attachment, beat the mixture from the bottom and growing at high speed. Beat until firm and glossy peaks form and the meringue has cooled, 5 to 7 minutes. Add vanilla and beat just to combine. Use frosting immediately.
  2. Place the frosting in a pastry bag fitted with a star tip Ateco # 867. I used a Wilton tip 4B. high pipe swirls on cupcakes and brown the meringue with a blowtorch kitchen and serve immediately
