Cookies and Cups -
I can not stop eating these cookies. They Peanut Butter Cup Brownie-Filled Cookie Sandwiches my sweet friend Shelly Cookies and Cups. His new cookbook mark (Cookies and Cups Cookbook) comes out April 12th and when I saw her recipe for this, I knew I had to try them first. I mean brownie cookies and peanut butter cups melty ... I'm here.
In addition, I like recipes where I have everything at hand. And in this case, I just happened to have a bunch of Reese on loan for Easter ... they are a staple in my house for almost any holiday, you know.
melted chocolate and butter meant we had a delicious start.
I used a teaspoon cookie for the brownie batter. As the dough rests, it thickens a bit to make it easier to pick up on your hob.
Cookies. And. Cups.
Sandwich while they are still warm and watch the middles ... with my heart melt.
Peanut Butter Cup Brownie-Filled Cookie Sandwiches
1/2 cup (1 stick) __gVirt_NP_NN_NNPS <__ br="" butter="" salted=""> flour 16 oz semisweet chocolate, chopped
1 cup all-purpose
1 teaspoon of baking powder
1/2 teaspoon salt
4 large eggs
1 1/2 cup packed light brown sugar
2 teaspoons vanilla extract
12 regular sized peanut butter cups

Peanut Butter Cup Brownie-Filled Cookie Sandwiches
1/2 cup (1 stick) __gVirt_NP_NN_NNPS <__ br="" butter="" salted=""> flour 16 oz semisweet chocolate, chopped
1 cup all-purpose
1 teaspoon of baking powder
1/2 teaspoon salt
4 large eggs
1 1/2 cup packed light brown sugar
2 teaspoons vanilla extract
12 regular sized peanut butter cups
- Preheat oven to 350 degrees F. line baking sheet parchment paper.
- In a medium saucepan, melt butter and chocolate over low heat, stirring frequently until the ingredients are just melted. Remove from heat and let the chocolate-butter mixture cool for about 5 minutes.
- Meanwhile, in medium bowl, combine flour, baking powder and salt. Then set aside.
- In another large bowl, whisk together eggs, brown sugar and vanilla. Add the chocolate and butter mixture to the egg mixture slowly, stirring as you go. Then add the flour mixture until blended.
- brownie mixture using a scoop shovel inch and 1 1/2 place on a baking sheet 2 inches. Bake for about 9 minutes until cookies are set in the middle.
- Allow cookies to cool on baking sheet for 3 minutes. Turn half the cookies and carefully place a cup of peanut butter on each biscuit returned. Place the remaining cookies on top while they are still hot. The heat will melt cookies cups enough to hold the sandwich together when completely cooled peanut butter
- Makes 12 - 16 sandwich cookies ..
