Rainbow Cupcakes

March is here and this weekend, I thought I would work on something cute and sweet to the Saint Patrick. Shamrocks, leprechauns, pots of gold, perhaps? But then I got bored ... none of these things really inspired me for some reason. I just did not feel so green treats I guess. Instead, I felt full of color. I decided on rainbows ... and cupcakes ... less pots of gold at the end.

I also felt like ... in color sequined bow my cupcakes.

I love these delicate jimmies Mr. Sprinkles. (I like this even better, but the pastel colors are no longer available. I am still very angry about it. I could use them forever. For everything.)

Well, the glitter bow work great for this little light cake.

and so bright and cheerful.

But for this project we need sugar cookies, too ... so you can easily cut Cupcakes ... Yum! Rainbow to the right size and round shape.

Cookie Cutouts

Use two different knives size circles for cookies. I used a round cookie cutter 2 1/4-inch and the lower end of a 1M Wilton decorating tip to cut the center.

But all cutting round shapes that you have on hand can work. Try using the plug to your watering containers for example. More on that below ...

So to make rainbows, I Cutter 2 1/4-inch circles, cut the centers and then just cut funds so they can easily fit into the icing.

in the photo above, I tried two sizes of different centers. I enjoyed the biggest opening better.

After the cookies are baked and cooled, they may be coated with flux.

Fondant

Roll Out white fondant and then cut circles using the same size round knives used for cookies. Apply a thin layer of frosting on top of the cookie, then place the fondant shapes right on top to secure.

Cut off any excess so your fondant shape fits your rainbow-shaped cookie.

And then it's time to color. The fun part. For me anyway. I'm much better with a pen than directing icing a tip in a smooth line, so this is it for me. Moreover, it is quite fast and less messy.

I used these AmeriColor Gourmet pens that I use often pops. They really work great on fondant, so I think you will have fun with them.

First, make marks for each color so you can get a sense of the thickness of the lines must be whether each color is equal.

Start with the red on the outside and even draw lines with each color until you reach the center.

Frosting clouds

To make the frosting puffy look, use a decorating bag fitted with a 807 tip and pipe Ateco large random dots of frosting around the edge of the cupcake. Use a knife to smooth the sides and push the frosting slightly so it appears that the clouds are full of shirt cupcake.

Sprinkle a little powdered sugar on top so that the frosting seems more cozy ... it will create a barrier so you can gently shape the clouds. Pat down the tops with your finger and use a toothpick to help define the cloud.

So, these are small circles I also made sugar cookies with. I used the bottom of a vermicelli cap because I did not cut the right size and for the center, I used the top of the Ateco decorating tip 807.

Initially I thought it would be the small bow cake toppers, but they were just too small, so I did something with them something.

See ... too little. They would be well on mini cupcakes though.

After seeing how cute puffy clouds on the cupcakes looked, I wanted to use them on the cookies, too.

So I colored in about 2/3 of the rainbow.

And added icing to the rest using the same technique for cupcakes.

Serves 24 cupcakes

Ingredients

CUPCAKES

  • 2 2/3 cups all purpose flour
  • 1 1/2 cups sugar
  • 1 tbsp baking powder
  • 4 whites egg
  • 1 cup whole milk
  • 1 c vanilla
  • 2/3 cup salted butter, softened
  • 1/3 cup arc -in-asparagus

GLAZE

  • [1/2cup softened butter
  • [1/2cup shortening
  • 1 c vanilla
  • 4 cups powdered sugar
  • 4 teaspoons milk
  • sugar additional powder to dust

Instructions

  1. Preheat oven to 350 degrees and the cake online tin with baking cups.
  2. Sift flour, sugar and baking powder in a large mixing bowl and mix down.
  3. In another bowl, combine the egg whites, milk and vanilla.
  4. Add butter to flour mixture and mix. As he begins to combine, slowly pour the milk mixture and mix until completely combined. Stir the seeds of the arc.
  5. Fill molds in little more than half. Bake for about 16 minutes or until done. Remove and let cool. Makes about 24 cupcakes.
  6. For the icing, beat butter, shortening and vanilla. Slowly add sugar and beat until smooth. Scrape the sides and add milk. Blend until smooth and creamy. Note: Double the recipe if you are frost 24 cupcakes like the images above, because I piled on.

To decorate, you will also need:

  • 24 sugar cookies - you can use the recipe for this post. 1/2 of the dough will make about two dozen cookies and you can freeze the rest for another time. Note:. You can also make and decorate the cookies in advance
  • 2 1/4 inches and cut Wilton 1M frosting tip or round cut similar size
  • Fondant
  • AmeriColor Gourmet Pens
  • Ateco 807 or Wilton 1M tip with the decorator bag and coupler to pipe the frosting
  • Toothpicks

and just so you can get some more Day St. Patrick feel with these ... look how just changing the background makes a difference. Sprinkle some rolos candy or gold wrapped chocolate coins on the table and you'll be set for the seventeenth.
