Pumpkin Pecan Chocolate Chunk Cookies

Last month I asked you guys for your favorite cookies. I learned a lot that I had never heard before. Among them, the pumpkin chocolate chip cookies. It is unimaginable that I had never heard of this before, being the lover cookie with chocolate chips that I am. So thanks! Thank you, thank you, thank you to turn me over these cookies. In fact, thank you - MJ, Jessica, Katrina, Janelle, Low, and Kellie for me to send your recipes (And all those I may have left out ... sorry.) I could not decide which recipe to try because they were all different, so I worked my own inspired by you guys. Then I decided to garnish with a maple brown butter frosting ... not that they needed to do something better taste. But let me tell you, this frosting was so good, I wanted to eat alone. Okay, I give you right. I do a lot of eating a few spoonfuls of this maple temptation. As long as I do not have enough for all cookies. Whoops! Anyway, hope you will too.

Here are the ingredients for the cookies.
Cookie Ingredients

Pumpkin Pecan Chocolate Chunk Cookies

2 1/4 cup self-rising flour
3 tbsp pumpkin pie spices
3/4 cup butter, room temperature
1 1/4 cup light brown sugar
1 cup sugar
2 vanilla
2 eggs
1 cup canned pumpkin
1 cup chopped pecans
1 1/2 cups semi-sweet chocolate pieces

  • Whisk together flour and pumpkin pie spice. Put aside.
  • In a large bowl, cream the butter.
  • Add both sugars and beat until light and fluffy.
  • Add vanilla.
  • Add eggs one at a time and beat until smooth.
  • Add flour mixture / spices to sugar mixture in three additions. Alternate with pumpkin in two additions, ending with the flour mixture.
  • Stir in chopped pecans and chocolate chips.
  • Drop on cookie sheet lined with parchment paper.
  • Bake at 350 degrees for 10-12 minutes. Makes about four dozen cookies.
  • Cool.

Cookie Dough

You can use an ice cream scooper to obtain evenly proportioned biscuits. Also, see how the pieces are all hidden in the dough? Make your cookies as good as they taste. Just record a few chocolate chips and stick them right on top of the cookie dough before throwing them in the oven.

Maple Brown Butter Frosting

Maple Brown Butter Frosting

sifted sugar 3 cups icing
1/2 cup butter
1 / 4 cup milk
2 c maple flavor

  • Sift the sugar and set aside.
  • Melt the butter over medium heat until golden brown. Look closely it does not burn.
  • Add butter with sugar, scraping all the butter in the bowl.
  • Add the milk and maple flavoring. Stir until smooth.
  • Spread on top of cookies with a knife or offset spatula.
