Double Chocolate Zucchini Cupcakes filled with chocolate ganache frosting and topped with goat cream cheese
Man, that's a mouthful. (And that was good, too!) I made this cupcake to enter the Island Cheese Recipe Contest France. Cheese I was given to work with :. GOAT
I originally going to do my first cheesecake with it. Then I remembered CHEESE was the ingredient for Iron Cupcake (IC) The challenge of this month. So I went from cheesecake cupcakes. This way, I can give a demonstration at once, even if I can not win again IC for another year. But it's okay, because I'm hoping to win big in cheese recipe Ile de France contest. The winner receives a grand prize of $ 1,000. Man, I could buy a lot of butter with that ... and some cheese, and of course.

What a cute label. I used goat cheese in the frosting and it really tasted delicious with chocolate cupcakes.
Then I used Valrhona bittersweet chocolate (a French chocolate) mixed into cake batter and also for ganache.

Double Chocolate Zucchini Cupcakes filled with chocolate ganache and topped with cream Goat Cheese Frosting
Double Chocolate Zucchini Cupcakes
1 1/2 cup flour
1/2 cup unsweetened cocoa
1 teaspoon natural baking
1 teaspoon baking soda 1/4
salt 1/4
1/2 cup butter, room temperature
1 1/4 cups sugar
2 eggs, room temperature 1/4 cup oil 1 teaspoon vanilla coffee
1/3 cup whole milk, room temperature
1 cup grated zucchini
3.5 ounces Valrhona chocolate bar semisweet, chopped into pieces
- Preheat oven to 350 ° F
- Line cupcake baking trays with 18 cups.
- mix together flour, cocoa, baking powder, baking soda and salt with a whisk. Put aside.
- Cream butter with a mixer in a large bowl. Add sugar, eggs, oil and vanilla one at a time, mixing well after each addition.
- Add flour mixture to sugar mixture in three additions, alternating with the milk in two additions (flour, milk, flour, milk, flour)
- Embed zucchini and chocolate chips until combined.
- Fill 2/3 molds and place in the oven immediately.
8. Bake for 15-18 minutes.
Creamy Goat Cheese Icing
5 oz Ile de France goat cheese
3 oz cream cheese, room temperature
3 cups sugar, pastry room temperature
1/2 tsp vanilla
- Sift the sugar and set aside.
- Beat the goat cheese, the cream cheese and vanilla in a large mixing bowl until creamy.
- gradually add sugar, mixing and scraping down sides of mixing bowl between additions.
Chocolate Ganache
2 oz Valrhona chocolate bar semisweet, chopped into pieces
1/4 cup whipping cream
3/4 cup confectioners sugar
- Place chocolate and whipped cream in the microwave. The heat in 30 seconds, stirring between, until melted. Mix thoroughly
- Add sugar and stir until well combined
- Pour the ganache into a small plastic squeeze bottle
To assemble ...
- corkage compressible halfway into the cupcake and press center ganache until it starts to the insertion surface.
- Then the creamy icing spread goat cheese on top with a knife or small spatula offset.
