Banana Chocolate Chunk Snack cake - It's time to snack! With the beginning of October, the internet makes me feel like I should share pumpkin recipes. I mean Pumpkin and what is everywhere. But I do not really feel like pumpkin right now. In fact, I'm not ready to fall at all. I wish I could get two months of summer. Like every year. That is where this rapid small banana cupcakes comes in.

Simple ingredients.

And just yum.

You can use mini chips in your dough, but I like chunky with chocolate.
Enjoy the banana cake baked by himself or top with icing.

This is true. Let's slap on a layer of chocolate icing cream.

One of the reasons why I love cupcakes so is cooking in a large, hassle free, easy layer. Furthermore, this means that many small square snacks for the next days.

Banana Chocolate Chunk Snack cake

2 cups all purpose
1 1/2 cc baking powder
1/2 salt
3/4 cup unsalted butter, room temperature
1 cup sugar
2 eggs
1 teaspoon vanilla
1 / 2 cup milk
1 cup mashed bananas (about 2 large bananas)
1 1/2 cups chocolate pieces
Icing
1 cup butter, room temperature
3 cups powdered sugar
1/3 cup unsweetened cocoa
1 teaspoon vanilla coffee
1 tablespoon milk
  • Preheat oven to 350 degrees Fahrenheit. Grease and flour a 9 X 13 inch flat baking.
  • In a medium bowl, whisk together flour, baking powder and salt until blended. Put aside.
  • In a bowl, cream butter and sugar. Add eggs and vanilla and mix until blended. Add milk, continuing to mix well. With the mixer to low, slowly add the flour and mix until just combined. Mix in the mashed bananas. (Note: I used a food processor to mash the bananas just before adding to the batter.) Stir in chocolate pieces
  • Pour batter into prepared pan and bake for 30-35 minutes or until done

  • Remove from oven and cool completely
For the icing :. Using a mixer, beat butter and vanilla until smooth. Sift the powdered sugar and cocoa and add slowly while mixing low. Increase to medium and beat until completely incorporated. Add a teaspoon of milk at a time until desired creaminess.
