Chocolate Peppermint Cookies -
I need chocolate to make up all the turkey and dressing of leftovers I went to eat in the last days so I did some quick biscuits on Sunday.

I blame Target and huge end-cap candy season Christmas displays for these cookies. I was shopping with my mother and went straight ahead until it was noted that they were white chocolate inside.
Yes. Peppermint White Chocolate M & M Yum.
So, naturally, I had to buy a few bags. Some snacks and some to cook with. And some snacks while I'm cooking.
Also, it never hurts to have white M & Ms handy for random decoration.
I used dark cocoa for chocolate in these cookies, but you can use regularly, too.
Spoon please.
Roll dough into balls and bake.
I wish to reserve a portion of chips and candy to squeeze in the balls after they are wound so that the chips are not all hidden inside the cookie.
It helps them look prettier and more pepperminty this way after they are cooked.
Not only the looks of help, hot biscuits and sweet. Big bite right out of the oven are always a must.

Dark Chocolate Peppermint Cookies
Serves 2 dozen cookies

Ingredients
- 1 1/2 cups all purpose flour
- 1/2 cup unsweetened cocoa natural (I used Hershey's Special Dark if you can find)
- 3/4 teaspoon of baking soda
- 1/2 teaspoon salt
- 2 tablespoons instant coffee crystals
- [1/2cup butter, slightly softened
- 1 1/2 cups sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 cup mint white chocolate M & the [M
- 1 cup bittersweet chocolate pieces
Instructions
- Preheat oven to 350 degrees and hob line with parchment paper.
- Combine flour, cocoa, soda, salt and coffee crystals in medium bowl using a whisk. Put aside.
- butter and sugar.
- Add eggs and vanilla and mix until blended.
- Add the flour mixture to the creamed butter and mix well.
- Incorporate M & M chocolate chips, then chill the dough for about 30 minutes.
- Skip balls. (Note :. Reserve a few nuggets of chocolate and sweets to squeeze into the tops of the dough just before baking)
- Bake for about 10-12 minutes or until done. Cool and eat.
