Quick and easy Valentine Treats -
If the day cake Valentine I did last week seemed to be too much, then I think you will enjoy these. They require very few ingredients or effort and they're still pretty cute.
Red Velvet Sandwich Cookies
They are soft and red and a perfect little gift to give to the 14th. And better yet, they are super easy!
All you need is
Box 1 red velvet cake mix *
1/2 cup butter softened at room temperature
2 eggs
1/2 cup butter, softened at room temperature
1 8 oz cheese packaging cream, softened room temperature
1 1lb. icing sugar box
1 teaspoon vanilla
* Any cake mix should work.

Tip :. For cookies consistent size, use a small ice cream scooper 1.5 inches when you place the dough on the baking sheet
the size of the finished cookies will be about 3 inches wide.
To assemble, spoon a small amount of icing on the flat side of a cookie. Take another cookie and press together until the frosting is flush with the edge.

- Preheat oven to 350 degrees.
- Mix ingredients until smooth.
- Drop spoonfuls of cookie dough on a baking sheet about two inches.
- Bake for 10-12 minutes.
- Cool.

- In a blender, butter cream, cream cheese and vanilla.
- Gradually add sugar and mix until smooth.
