Candy Heart Cupcakes

Sometimes simple is just as sweet. I know I'm a little late posting these, but I thought I would share the recipe. It really is a good recipe for cake mix improved (that is, if you do not mind using a mixture). I found it in the Bundt Classics Cookbook and used for these cupcakes. So here goes ...

Chocolate Cake Rich
1 (18.25 oz) pkg. cake mix dark chocolate
1 (3.4 oz.) pkg. instant chocolate pudding
1 cup sour cream
1/2 cup of hot water
1/3 cup vegetable oil
4 eggs
1 1/2 cup mini chips semisweet chocolate

1. Preheat oven to 350 degrees.
2. Line cupcake pans with baking cups.
3. In a large bowl, combine all ingredients except the chocolate chips.
4. Mix 2 minutes at medium speed.
5. Increase the speed to medium-high; stir 3 minutes.
6. Stir in chocolate chips.
7. Pour into cake pans.
8. Bake at 350 for about 20 minutes or until an inserted toothpick comes clean and fresh

Makes about 24 cupcakes

. Note: To use this recipe in a Bundt cake pan and heat oven to 325 degrees. Grease and flour bundt pan 10-12 cups and fill 3/4. I did it this way several times and it is so good, he did not even need frosting. Just sprinkle some powdered sugar on top. Here Bundt Cake Pan I use. He is great!

Buttercream Frosting
1 cup (2 sticks) butter, softened
1 teaspoon pure vanilla extract
1 1b. 10X powdered sugar
1-3 teaspoons of milk, half and half or cream

1. Using a mixer, cream softened butter and vanilla with a blender until smooth.
2. Gradually add sugar, allowing the butter and sugar and cream together before adding more.
3. If you want a little more creamy, add a teaspoon of milk at a time and beat up until you get the right texture.
